Ingredients
- 1 (19oz) can chickpeas, drained and rinsed
- 1 (19oz) can white beans, drained and rinsed
- ¼ cup red onion, diced
- 2 bell peppers, diced
- 1½ cups parsley, chopped
- ½ cup banana peppers, chopped
- ⅓ cup roasted red peppers, chopped
- 1 cup sliced salami
- ¼ cup red wine vinegar
- ½ cup olive oil
- 1 tbsp oregano
- 1 tbsp grainy mustard
- Salt and pepper to taste
Recipe
- Combine chickpeas, white beans, red onion, bell peppers, parsley, banana peppers, roasted red peppers, and salami in a large bowl.
- Whisk together red wine vinegar, olive oil, oregano, mustard, salt, and pepper.
- Pour dressing over salad and toss well. Taste and adjust seasoning.
