110g (about 30 chips) 70% dark chocolate chips, chopped
8 tbsp (113g) unsalted butter
2 large eggs
1 cup (206g) granulated sugar
¾ cup (92g) all-purpose flour
¼ tsp (1g) kosher salt
½ tsp (2g) vanilla
3 tbsp (24g) cocoa nibs
Recipe
Line an 8-inch round or square pan with parchment. Preheat oven to 300°F.
Bring a sauté pan of water to a simmer. Place chocolate and butter in a bowl over the simmering water until melted. Remove and let cool slightly.
Place eggs and sugar in a mixer bowl. Set the bowl over the simmering water and whisk until the sugar has dissolved and the mixture is warm. Transfer to mixer and lightly whisk.
Pour chocolate mixture into egg mixture and combine. Add flour, salt, and vanilla, mixing gently. Fold in cocoa nibs.
Pour into prepared pan and spread evenly. Bake about 20 minutes — the top will show a few cracks. Do not overbake; these are meant to be fudgy. Cool before slicing.
