Winter Sour
Ingredients
- Leaves from 1 small rosemary sprig
- 1½ ounces clover honey syrup*
- 1 ounce Campari
- 1½ ounces fresh Meyer lemon juice
- 1 ounce egg white
- Garnish: rosemary sprig

Add the rosemary leaves and honey syrup to a cocktail shaker. Muddle gently to bruise the rosemary and release its oils into the syrup.

Add the Campari, Meyer lemon juice, and egg white. Dry-shake vigorously without ice for 15 seconds to emulsify the egg white and build a thick foam.

Add ice and shake again until well chilled.

Double-strain into a chilled cocktail glass, leaving all rosemary solids behind.

Garnish with a small rosemary sprig and serve.
*Clover honey syrup: Combine ½ cup clover honey and ½ cup water in a small saucepan over medium heat. Stir until the honey has fully dissolved. Allow to cool completely, then transfer to an airtight container. Keeps refrigerated for up to 1 month.
